Homemade Roasted Mediterranean Vegetables

I love cooking and making things from scratch, this week I thought I would give roasted Mediterranean vegetables a bash. I didn’t follow any recipe I just kind of winged it – after all how hard can it be to mess up a few bits of veg in a bag. We quite often buy the already prepared Mediterranean vegetables from the supermarket but at over £2 a pack and not much in there I thought it was a waste of money, so here is how I did it.

RECIPE

  • 3 Peppers
  • 1 Courgette
  • 1 Red Onion
  • 2 tbsp Italian Seasoning
  • 1/2 tsp Crushed Chillies (to taste)
  • 2 tbsp Extra Virgin Olive Oil

METHOD

Chop all ingredients into good sized chunks, you could also add cherry tomatoes to this recipe.

Next, take a large zip lock food bag and put all the vegetable inside, add the olive oil first and then the seasoning and chillies.

Zip the bag up and give it a good mix around until you can see that all the vegetables have been coated with the herbs.

I prepared this recipe in the morning to use later during the day so popped it in the fridge for a few hours. When I was ready to use I simply pre heated the oven to around 180 degrees and poured the veg into a glass baking dish and cooked for around 35-40 minutes, or until the vegetables had started to crisp.

I served with grilled chicken breast and as you can see it looks just like the supermarket version.
