I love making Fajitas they are really quick and taste yummy. But being a busy mum of two demanding children I like easy recipes and have put together this slow cooker chicken fajita recipe for you.
2 x Chicken Breasts (more if you are feeding the family)
2 x Peppers
1 x Red Onion
1 x Fajita Dinner Kit (this includes the seasoning)
1 x Lime
1 x Tinned Chopped Tomatoes
1 x Tsp Garlic
For ease and laziness I like to buy a fajita dinner kit as it includes the wraps, salsa and seasoning. I don’t have the time to be faffing with a little bit of this and a pinch of that so the pre-made seasoning is just the ticket.
I like to marinade my chicken the night before I want to make the fajitas. For this I just take a large food bag, cut my chicken into strips and add the seasoning, give it a good shake around and pop it in the fridge overnight.
Once the chicken has had time to soak in the spices I chop up the peppers and red onion. I put these into the slow cooker first then add the chicken on top, I then add my garlic and chopped tinned tomatoes and a squeeze of lime. Turn the slow cooker onto the low setting and you are good to go for around 6 – 7 hours.
I do give the fajita mix a good stir half way through cooking. When you are ready to serve your chicken fajitas take two forks and shred the chicken, it should just fall apart anyway so won’t take much effort.
Serve in a big bowl and add your wraps, salsa, cheese (optional) to the table for the family to tuck in and help themselves. This meal is so filling you could even keep some of the chicken for lunch or I like to make a fajita bowl which is so tasty adding avocado and some sour cream.
