Autumn has finally arrived and that means only one thing – it’s slow cooker season. Time to cosy up and scoff all those scrumptious comfort foods. Stew is most certainly up there – along with a good roast dinner – as one of my favourite warm, filling Autumnal dishes. A good stew reminds me of my childhood as my lovely little Nan used to make the best beef stews with dumplings and all the trimmings.
Slow cookers are fantastic aren’t they? You can create so many versatile dishes with minimal effort, my kind of cooking. I love loading the crock pot up in the morning, setting the heat, popping the lid on and leaving it to do its thing.
I made an updated version of my Beef Stew as I am coeliac and can no longer eat foods containing gluten. This stew recipe does not compromise on flavour just because it is gluten free, you honestly would not know the difference and neither would the family.
Here is what you will need:-
- 500g Diced Beef
- 1 Onion
- 3 Parsnips
- 3 Carrots
- 7 New Potatoes (halved)
- 300ml Gluten Free Gravy
- 400ml Gluten Free Stock Cube
- 2 Tbsp Tomato Puree
- Coconut Oil
First you will need to pop the kettle on to make the stock and gravy. Now, I used chicken stock cubes as that is all I had in. You can use vegetable stock or whatever you have in the cupboards.
Peel & chop the parsnips, onion and carrots, half the new potatoes and pop them all into the crock pot.
Whilst you are waiting for the kettle to boil, heat a frying pan with a little coconut oil to seal the diced beef, drain the excess fat/juice and add to the crock pot.
Once the stock and gravy has been mixed up add this to the slow cooker, my gravy was super thick with a few lumps but it soon thinned out.
Add the tomato puree to the pot and give it all a good mix.
Pop the lid on, set the heat to low and the timer for 8 and a half hours, you are all good to get on with your day.
Once you are ready for dinner, serve with either dumplings or crusty bread – these can be gluten free options. I quite like to add some extra greens to my stew so served mine with green beans and broccoli but gave the rest of the family tomato/garlic bread (which was not gluten free). It was absolutely delicious and packed full of goodness. I had a bit left over and lots of stew gravy so I potted it up and froze it for another meal.
