How To: Gluten & Lactose Free American Style Pancakes
Pancakes are most certainly not just for that one day in February! We love a good stack of those fluffy things at any time of the year. I have to admit, I’m all for the quick fix in life and tend to buy the shop bought (Aldi) thin pancakes for easy breakfasts for the kiddies. But, this year I wanted in on the fun, as I can’t have those yummy already made pancakes being Coeliac. I tried a new recipe – it is not ground breaking or anything I realise this – but, it is gluten and lactose free meaning I could enjoy them too. I have to say, I…

How To: Gluten & Dairy Free Gooey Chocolate Chunk Cookies
Who doesn’t love a gooey chocolate chunk cookie washed down with a hot cuppa tea!? After being diagnosed with Coeliac Disease the option for me to scoff my face with those delicious supermarket cookies was non existent and to be honest I was devastated. I have been trying to bake our own sweet treats and reaching less for the shop bought version as some of the gluten free options are loaded with sweeteners which really irritate my tummy. If you are looking for a cookie that is gooey on the inside yet a little crisp on the outer layer then I have just the recipe for you. GLUTEN AND DAIRY…

Gluten Free Slow Cooker Beef Stew
Autumn has finally arrived and that means only one thing – it’s slow cooker season. Time to cosy up and scoff all those scrumptious comfort foods. Stew is most certainly up there – along with a good roast dinner – as one of my favourite warm, filling Autumnal dishes. A good stew reminds me of my childhood as my lovely little Nan used to make the best beef stews with dumplings and all the trimmings. Slow cookers are fantastic aren’t they? You can create so many versatile dishes with minimal effort, my kind of cooking. I love loading the crock pot up in the morning, setting the heat, popping the…

What I Ate Today #coeliac #glutenfree
I love producing what I ate today posts. I cannot tell you how many times I have gone back to these posts for meal ideas and just to see what I was scoffing. As I mentioned in previous posts, this is not real time, this post was from June when I was taking a break from blogging. Here is what I ate on Monday 15th June 2020. Breakfast – 7.00am Nothing unusual here – a bowl of scrumptious gluten free porridge, mixed up with my favourite probiotic Biomel. I recently tried a new peanut butter and absolutely love it. The Meridian Smooth Peanut Butter is delicious, it is a little…

What I Ate Today – Coeliac Gluten Free
What I Ate Today BREAKFAST No matter how hard I try I cannot steer myself away from a good hearty bowl of porridge. I love Asda Free From Porridge Oats (40g) in a bowl with a dark chocolate Biomel and a dollop of peanut butter. This genuinely fills me up for a good 4 hours. MID MORNING SNACK Another favourite as you will know, a salted caramel Nakd Bar. Absolutely delicious and a perfect snack to keep me going. LUNCH Two things I can no longer stomach at the moment but on this particular day I made eggs, turkey bacon, cheese and cherry tomatoes. Eggs really upset my tummy if…

What I Ate Today – Summer
Staying with the Summer vibe, here is what I ate this week. BREAKFAST Since my diagnosis with Coeliac Disease things have been trial and error for me and still are up in the air. For breakfast today I had 40g of Waitrose gluten free porridge oats with pumpkin seeds, mixed with a Biomel Probiotic and a chopped banana. Washed down with water and a cuppa coffee. This breakfast keeps me full for most of the morning, although I’m getting a little bored with porridge. LUNCH Today I strayed from eggs and instead had a small tin of tuna mixed with a tiny blob of extra light mayo, some cucumber sticks…
