    Easy Roasted Spicy Chickpeas This is possibly the easiest snack to make. I really love adding nuts and chickpeas to my meals for extra protein and crunch. However, buying tiny packets of roasted chickpeas can become quite expensive. So I took it on-board to make them myself and they turned out just perfectly.     I’ve not published a What I ate in a Day post for ages. Things have changed a little with my diet which I’ll go into more depth in another post. But, I found out I’m lactose intolerant recently so have been cutting out diary as it makes me feel super poorly. This has been a challenge in which I’m still struggling with but I’ll get there.     What I ate today. I popped into M&S at the weekend and picked up a couple of my favourite foods. I’ve included at the end of this post my meals for the week if you fancy a nosy.     What I Ate For Dinner

    I haven’t published a food related post in ages so I thought I would show you what I’ve been eating for dinner. Monday Today I scrambled 2 eggs in a non-stick pan and served with 2 turkey rashers. It doesn’t look like much but it was really filling, I love this type of dinner as it requires minimal effort.     As a parent you go through phases with your children, the sleep regression, wonder weeks, growth spurts, throwing tantrums and what I think is possibly the most challenging – fussy eating.
